煸炒基本解释

汉语拼音:biān chǎo

又称干煸或干炒,平常时候大多叫做干煸。它是一种较短时间加热成菜的方法,原料经刀工处理后,投入小油量的锅中,中火热油不断翻炒,原料见油不见水汁时,加调味料和辅料继续煸炒,至原料干香滋润而成菜的烹调方法。
