一种乳制品。用鲜牛奶或羊奶经过消毒、浓缩，加糖制成。可贮存较长时间。

1. 经过减压浓缩的全乳，一般用牛奶为原料。把牛奶消毒后，浓缩、杀菌而制成。便于贮存和运输。可做饮料，亦用于复制食品。

2. 鍊乳：谓以石钟乳煎煮入药。

   明 李时珍 《本草纲目·石三·石钟乳》﹝集解﹞引 苏颂 曰：“ 唐 李补闕 鍊乳法云：取 韶州 钟乳，无问厚薄，但令颜色明浄光泽者，即堪入鍊。”
