有味道的物质刺激舌面和口腔黏膜上的味觉细胞（味蕾）引起的感觉。由溶解于水或唾液中的化学物质刺激引起神经冲动，经各级有关中枢传导到大脑皮层而产生味觉。基本味觉有甜、酸、苦、咸四种，其余都是混合味觉。
