高级脂肪酸与甘油形成的酯。在常温下呈液体的称为油，呈固体的称为脂肪。前者如菜油、花生油，后者如猪油、牛油。棉子油等氢化，可转化为固态的人造脂肪，可供食用及制皂。油脂、蛋白质和糖是人类营养的三种主要成分。
